NATIVE GREENS
#There are hundreds of native edible plants to the Maryland/DMV area, but our absolute favorite is ramps, or “wild garlic”Ramps are bulbous perennial flowering plants and pop up all over North America. West Virginia (and Appalachia in general) is particularly blessed in the ramp department, considering the elevation and rain. They tend to grow in patches that take many years to reach a larger size.You can use them in place of any of your recipes that include alliums, like onions, garlics or shallots. Ramps are mouth wateringly garlicky They are partically delicious whipped into a butter and served over steak!
Ostrich fern! AKA fiddlehead fern
Another favorite, the best way to describe its taste: bitter asparagus. A zippy edible plant sauteed with some olive oil and garlic, served in a salad or alongside your favorite protein. They can also be pickled to add brightness and punch to any meal.
